Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 can chickpeas, drained and rinsed
- 1 red onion, diced
- 1 red bell pepper, diced
- 2 tbsp. Golden Sunset Shawarma spice blend
- 2 tbsp. olive oil
- Salt and pepper, to taste
- Juice of 1 lemon
- 2 tbsp. chopped fresh parsley
- 2 tbsp. chopped fresh mint
Directions:
Preheat the oven to 400°F.
In a large bowl, toss together the sweet potatoes, chickpeas, red onion, red bell pepper, Shawarma spice blend, olive oil, salt, and pepper.
Spread the mixture out in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown.
Remove from the oven and let cool for a few minutes.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Drizzle the dressing over the roasted sweet potato and chickpea mixture, and toss to combine.
Sprinkle the chopped parsley and mint over the top of the salad.
