Vegetable Bliss Soup

 

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons Vegetable Bliss spice blend
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the carrots, celery, and red bell pepper and sauté for another 5 minutes.
  • Add the Vegetable Bliss spice blend and stir to coat the vegetables.
  • Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 20 minutes.
  • Add the diced tomatoes and chickpeas and simmer for another 10 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped parsley.
