Ingredients:
4 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
1/2 cup diced onion
1/2 cup diced bell pepper
1 1/2 cup cooked, shredded chicken or beef (optional)
1 tablespoon Taco Tuesday seasoning
1 tablespoon olive oil or butter
Salsa, sour cream, and guacamole for serving
Instructions:
Prepare the Filling:
In a medium bowl, combine the shredded cheese, diced onion, diced bell pepper, and cooked chicken or beef (if using). Sprinkle Taco Tuesday seasoning over the mixture and toss to combine.
Assemble the Quesadillas:
Lay out the flour tortillas on a flat surface. Evenly distribute the cheese mixture over half of each tortilla, then fold the other half over to create a half-moon shape.
Cook the Quesadillas:
Heat a large skillet over medium heat and add a little olive oil or butter. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
Serve:
Cut each quesadilla into wedges and serve with salsa, sour cream, and guacamole.
