Yeast-Free Tuscan Schiacciata Recipe
Ingredients:
500 g (4 cups) all-purpose flour
1 tbsp baking powder
1 tsp salt
300 ml (1 1/4 cups) warm water
3 tbsp extra virgin olive oil (plus more for brushing)
Coarse sea salt
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the flour, baking powder, salt, and 1 tablespoon of La Spezia seasoning.
Make a well in the center and pour in the warm water and 2 tablespoons of olive oil.
Mix the ingredients together until a dough forms. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
Shape the Schiacciata:
Preheat your oven to 220°C (430°F).
Transfer the dough to a baking sheet lined with parchment paper or a well-oiled baking tray.
Stretch and flatten the dough into a rectangular or oval shape, about 1-2 cm thick.
Prepare for Baking:
Use your fingers to make dimples all over the surface of the dough.
Brush generously with olive oil, ensuring it gets into the dimples.
Sprinkle coarse sea salt and the remaining 1 tablespoon of La Spezia seasoning over the top.
Bake:
Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy on the edges.
Cool and Serve:
Remove from the oven and let it cool slightly on a wire rack before slicing.
Serve warm or at room temperature. This yeast-free schiacciata is perfect on its own, as a sandwich base, or as an accompaniment to soups and salads.
