Uppity Chicken Spiced Fried Chicken Dinner
Ingredients:
For the fried chicken:
4 cups buttermilk
2 tbsp Uppity Chicken spice blend
1 whole chicken, cut into 8-10 pieces
2 cups all-purpose flour
1 tbsp baking powder
Salt and pepper to taste
Vegetable oil, for frying
For the mashed potatoes:
2 lbs russet potatoes, peeled and cubed
Salt and pepper to taste
1/2 cup milk
1/4 cup unsalted butter
1 teaspoon La Spezia Italy spice blend
1/4 cup sour cream
For the green beans:
1 lb fresh green beans, ends trimmed
1 tbsp unsalted butter
1 teaspoon Wilde Garlek spice blend
Salt and pepper to taste
Instructions:
For the fried chicken:
In a large bowl, combine the buttermilk and 1 tablespoon of Uppity Chicken spice blend. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
In a shallow dish, whisk together the flour, baking powder, the remaining Uppity Chicken spice blend, and salt and pepper.
Heat about 1 inch of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Remove the chicken pieces from the buttermilk and let any excess drip off. Dredge the chicken in the flour mixture, coating all sides evenly.
Carefully place the coated chicken pieces in the hot oil and fry for 10-12 minutes per side, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown. Fry in batches if necessary to avoid overcrowding the pan.
Transfer the fried chicken to a wire rack set over a baking sheet to drain any excess oil.
For the mashed potatoes:
Place the cubed potatoes in a large pot and cover with water. Add a generous pinch of salt.
Bring the water to a boil, then reduce the heat and simmer the potatoes for 15-20 minutes, or until tender.
Drain the potatoes and return them to the pot.
Mash the potatoes with a potato masher or fork. Add the milk, butter, La Spizia Italt spice blend, and sour cream, and mix until smooth and creamy. Season with salt and pepper to taste.
For the green beans:
Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, or until tender but still crisp.
Drain the green beans and immediately plunge them into an ice bath to stop the cooking process.
In a large skillet, melt the butter over medium heat. Add the Wilde Garlek spice blend, and cook for 1 minute.
Add the green beans to the skillet and cook for 2-3 minutes, until heated through. Season with salt and pepper to taste.
