Turkish Pumpkin Dip with Eastern Mediterranean Seasoning

Ingredients:
1 medium-sized pumpkin (about 2-3 lbs), peeled, deseeded, and chopped into cubes
1 cup plain yogurt (preferably Greek yogurt for creaminess)
2 tablespoons olive oil, plus extra for drizzling
2-3 teaspoons Eastern Mediterranean seasoning from Oak City Spice Blends
Instructions:
Roast the Pumpkin: Preheat your oven to 375°F (190°C). Toss the pumpkin cubes with 1 tablespoon of olive oil and spread them out in a single layer on a baking sheet. Roast for 35-40 minutes, or until the pumpkin is tender and lightly caramelized. Remove from the oven and let it cool.
Blend the Dip: In a food processor, combine the roasted pumpkin, yogurt, 1 tablespoon of olive oil, and 2 teaspoons of Eastern Mediterranean seasoning. Blend until smooth and creamy. If the dip is too thick, you can add a bit more yogurt to reach the desired consistency.
Taste and Season: Transfer the dip to a serving bowl and give it a taste. Adjust the seasoning if needed, adding more Eastern Mediterranean seasoning or a pinch of salt, if required.
Serve: Drizzle with a bit more olive oil on top for added richness. You can also sprinkle a little more of the seasoning on top for garnish.
Serving Suggestions: This dip pairs wonderfully with warm pita bread, crudité, or even as a spread on sandwiches.
