Spiced Ful Medames - Egyptian Baharat

Spiced Ful Medames

  • 2 cups dried fava beans, soaked overnight

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 tbsp Egyptian Baharat spice blend

  • 1/4 cup olive oil

  • Salt, to taste

  • Juice of 1 lemon

Toppings:

  • Tomatoes

  • Sliced cucumbers

  • Chopped parsley

  • Sliced red onions

  • Eggs (hard-boiled or soft-fried)

  • Tahini sauce

  • Pita bread or toast

Instructions:

  1. Drain the soaked fava beans and rinse them under cold water.

  2. Place the fava beans in a large pot and cover them with water. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beans are tender. Drain and set aside.

  3. In a separate pan, heat olive oil and sauté onion and garlic until translucent.

  4. Add Egyptian Baharat and cook for 1 minute.

  5. Stir in the cooked fava beans, lemon juice, and salt. Cook for another 5 minutes, allowing the flavors to meld.

  6. To serve, place the spiced fava beans in a bowl and top with your choice of toppings. Enjoy with pita bread or flatbread on the side.
