Spiced Ful Medames
2 cups dried fava beans, soaked overnight
1 onion, chopped
2 garlic cloves, minced
1 tbsp Egyptian Baharat spice blend
1/4 cup olive oil
Salt, to taste
Juice of 1 lemon
Toppings:
Tomatoes
Sliced cucumbers
Chopped parsley
Sliced red onions
Eggs (hard-boiled or soft-fried)
Tahini sauce
Pita bread or toast
Instructions:
Drain the soaked fava beans and rinse them under cold water.
Place the fava beans in a large pot and cover them with water. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beans are tender. Drain and set aside.
In a separate pan, heat olive oil and sauté onion and garlic until translucent.
Add Egyptian Baharat and cook for 1 minute.
Stir in the cooked fava beans, lemon juice, and salt. Cook for another 5 minutes, allowing the flavors to meld.
To serve, place the spiced fava beans in a bowl and top with your choice of toppings. Enjoy with pita bread or flatbread on the side.
