Spiced Cabbage Rolls
1 large head of green cabbage
1 lb ground beef
1 lb ground pork
1 cup cooked rice
1 large onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp freshly ground black pepper
2 cups beef broth
1 tbsp flour
2 tbsp butter
Instructions:
Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage head and blanch them in boiling water for 2-3 minutes, until softened. Drain and set aside.
In a large bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, Kleindeutsch Bavaria spice blend, salt, and pepper. Mix well.
Lay a blanched cabbage leaf flat on a work surface. Place about 1/4 cup of the meat mixture in the center of the leaf. Fold the sides of the leaf inwards, then roll up to enclose the filling. Repeat with the remaining cabbage leaves and filling.
In a large skillet or Dutch oven, arrange the cabbage rolls seam-side down. Pour the beef broth over the rolls, making sure they are mostly submerged.
Bring the broth to a boil, then reduce the heat to low and simmer, covered, for 1-1.5 hours, or until the cabbage rolls are cooked through and tender.
Carefully remove the cabbage rolls from the skillet and keep them warm. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until a roux forms.
Gradually whisk in the liquid remaining in the skillet with the cabbage rolls, stirring constantly to avoid lumps. Cook for a few minutes until the sauce thickens.
