Simple Masala Spiced Chickpea Curry
Ingredients:
For the Curry:
1 tablespoon vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 inch ginger, grated
1 can (15 oz) chickpeas, drained and rinsed
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
3 tablespoons Vegetable Masala spice blend
Salt to taste
Fresh cilantro, for garnish
For Serving:
Cooked rice or naan bread
Directions:
Cook the Aromatics:
Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger. Cook, stirring frequently, until the onion is translucent and soft, about 5 minutes.
Add Chickpeas and Spices:
Add the chickpeas and Vegetable Masala spice blend to the skillet. Stir well to coat the chickpeas in the spices. Cook for 2 minutes to allow the flavors to meld.
Simmer the Curry:
Add the diced tomatoes with their juice and coconut milk. Stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Cook, stirring occasionally, for 15-20 minutes, or until the curry has thickened slightly. Season with salt to taste.
Serve:
Garnish the curry with fresh cilantro. Serve hot over cooked rice or with naan bread on the side.
