Savory Potato Waffles
2 cups mashed potatoes (leftover or freshly prepared)
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon #5 Smoky Mountain Spice Blend
2 large eggs, lightly beaten
1/2 cup milk
1/4 cup unsalted butter, melted
1/2 cup grated cheddar cheese (or your preferred cheese)
1/4 cup chopped green onions or chives
Non-stick cooking spray, for waffle iron
Optional toppings: sour cream, fried egg, crumbled bacon, sliced avocado, or salsa
Preheat your waffle iron according to the manufacturer's instructions.
In a large mixing bowl, whisk together the flour, baking powder, salt, and Smoky Mountain Spice Blend.
In a separate medium-sized bowl, mix the mashed potatoes, lightly beaten eggs, milk, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients, stirring gently until the mixture is just combined. Do not overmix.
Fold in the grated cheese and chopped green onions or chives.
Lightly coat the heated waffle iron with non-stick cooking spray.
Scoop about 1/2 to 3/4 cup of the potato waffle batter (depending on the size of your waffle iron) onto the center of the waffle iron. Close the lid and cook according to your waffle iron's instructions, usually for 3-5 minutes or until golden brown and crispy.
Carefully remove the cooked potato waffle from the waffle iron and place it on a wire rack to prevent it from getting soggy. Repeat with the remaining batter.
