Ingredients:
Assorted vegetables (such as potatoes, carrots, beets, turnips, parsnips, and onions)
Viking Salt seasoning
Olive oil
Instructions:
Preheat the oven to 400°F (200°C).
Wash and chop the vegetables into bite-sized pieces.
Toss the vegetables with olive oil and sprinkle with Viking Salt seasoning.
Spread the vegetables in a single layer on a baking sheet.
Roast in the oven for 30-40 minutes or until the vegetables are tender and caramelized, stirring occasionally.
Serve hot as a side dish.
