Roasted Eggplant
Ingredients
2 medium Eggplants, sliced into 1/2-inch rounds
1/4 cup Olive oil
2 tablespoons No. 42 Fluffy Za'atar spice blend
Salt to taste
Instructions
Preheat oven to 400°F (200°C).
Brush eggplant slices with olive oil and sprinkle with No. 42 Fluffy Za'atar spice blend and salt.
Arrange eggplant slices on a lined baking sheet in a single layer.
Bake for 20-25 minutes, until tender and golden. Serve warm.
