Roaring Rooster Breakfast Skillet
Ingredients:
4 large eggs
6 slices of bacon, chopped
1 cup diced potatoes
1/2 cup bell peppers, diced
1/2 cup onion, diced
1 tablespoon olive oil
1 tablespoon "The Roaring Rooster" seasoning
1/4 cup shredded cheddar cheese
Fresh parsley, chopped for garnish
Instructions:
Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set it aside, leaving the bacon grease in the skillet.
Cook the Vegetables: Add the potatoes, bell peppers, and onions to the skillet with the bacon grease. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender and the vegetables are softened. If needed, add the olive oil to ensure the vegetables cook evenly.
Add Bacon and Seasoning: Return the cooked bacon to the skillet. Sprinkle "The Roaring Rooster" seasoning over the mixture and stir well.
Cook the Eggs: Create four small wells in the skillet and crack an egg into each. Cover the skillet and cook until the eggs reach your desired doneness.
Finish and Serve: Sprinkle shredded cheddar cheese over the top. Once melted, garnish with fresh parsley and serve hot.
