Turkey Samosas with Oak City Spice Blend - Garam Masala Northern Seasoning
2 cups cooked turkey, finely chopped
1 cup boiled and mashed potatoes
1 onion, finely chopped
2 green chilies, finely chopped
1 tsp ginger-garlic paste
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp dried mango powder (amchur)
Salt to taste
2 cups all-purpose flour
4 tbsp oil + extra for frying
Water (for kneading)
Instructions:
Mix flour, salt, and oil for dough. Gradually add water and knead. Rest for 30 minutes.
Sauté cumin, chilies, and onions in oil. Add ginger-garlic paste.
Add turkey, potatoes, and spices. Cook for 5-7 minutes. Cool.
Roll dough into circles and fill with turkey mixture.
Deep fry until golden brown. Serve with chutney.

Instructions:
In a bowl, combine the chopped turkey, mashed potatoes, parmesan cheese, parsley, Island of Montreal, salt, and pepper. Mix well.
Shape the mixture into small oval rolls.
Dip each croquette into the beaten eggs, then coat with breadcrumbs.
Heat oil in a deep frying pan over medium heat.
Fry the croquettes until golden brown on all sides.
Place on paper towels to drain excess oil.
Serve hot with your preferred dipping sauce.

Instructions:

Heat a non-stick skillet and pour 1/4 cup of batter, swirling to coat the base. Cook until golden, flip, and cook the other side.
Fill each crepe with diced ham and cheese. Fold in half.
Return to skillet to melt the cheese slightly. Garnish with parsley before serving.

3 cups cooked rice (preferably day-old)
1 cup fresh pineapple chunks
1 cup frozen peas and carrots

2 eggs, beaten
2-3 tbsp soy sauce
3 green onions, sliced
1 tbsp sesame oil
2 tbsp vegetable oil

Instructions:
Heat vegetable oil in a skillet or wok. Fry ham until slightly crispy.
Add beaten eggs. Scramble until set.

2 garlic cloves, minced

4 cups chicken or vegetable broth

2 tbsp butter
Fresh chives, chopped for garnish
Crispy Bason for garnish
Salt and pepper to taste
Instructions:
Melt butter in a pot. Sauté onions until translucent.
Add garlic and ham. Cook for 3-4 minutes.
Add broth and bring to a boil. Add potatoes and Holy Smoke Seasoning. Simmer until tender.
Mash some potatoes to thicken the soup. Stir in cream. Season with salt and pepper. Simmer 5 minutes. Garnish with chives and bacon.
