Ingredients:
2 cups mashed potatoes
1 cup all-purpose flour
2 tablespoons butter, melted
Salt and pepper to taste
Additions/Substitutions:
Cheese & Onion: 1/2 cup grated cheddar cheese + 1/4 cup finely chopped onion + Option to add 1 teaspoon Oak City Spice Blends Eastern Mediterranean seasoning
Bacon: 1/4 cup cooked and crumbled bacon + Option to add 1 teaspoon Oak City Spice Blends Wiggly Piggly seasoning
Spinach: 1/2 cup cooked and chopped spinach + Option to add 1 teaspoon Oak City Spice Blends Garden Delight seasoning
Zucchini: 1/2 cup grated zucchini (excess moisture squeezed out) + Option to add 1 teaspoon Oak City Spice Blends Vegetable Bliss seasoning
Sweet Potato: 1/2 cup mashed sweet potato + Option to add 1 teaspoon Oak City Spice Blends Escape to Blue Ridge seasoning
Cinnamon Sugar: Sprinkle with cinnamon sugar before serving + Option to add 1 teaspoon Oak City Spice Blends 1st Day of Autumn seasoning
Instructions:
In a large mixing bowl, combine the mashed potatoes, flour, melted butter, and salt and pepper. Mix until well combined.
Add your desired addition or substitution ingredients to the dough and mix until evenly distributed. If using the optional seasoning blends, add them to the dough at this stage.
Divide the dough into 4 equal portions and shape each portion into a ball.
On a lightly floured surface, roll out each ball of dough into a circle, about 1/4 inch thick.
Heat a skillet or griddle over medium heat. Cook each farl for 3-4 minutes on each side, or until golden brown and cooked through.
Remove from the skillet and repeat with the remaining farls.
Serve warm and enjoy with your favorite toppings or spreads.
