Potato Dumplings
Ingredients
2 cups Mashed Potatoes, chilled
1/2 cup All-purpose Flour
1 large Egg
1 teaspoon No. 12 Greek Spice Blend
2-3 slices stale Bread, finely grated
4 cups water
1 teaspoon Salt and Pepper
Instructions
In a large mixing bowl, combine the mashed potatoes, flour, egg, No. 12 Greek Spice Blend, salt, and pepper. Mix well.
Add enough grated bread to form a soft and pliable dough, about 1/4 cup.
Divide the dough into 8-10 equal pieces and shape each piece into a smooth ball.
Bring the water and salt to a boil in a large pot.
Carefully drop the potato dumplings into the boiling water, one at a time.
Reduce the heat to low and simmer the dumplings for 20-25 minutes, or until they float to the surface and are cooked through.
Remove the dumplings with a slotted spoon and serve hot with gravy.
Note: The dumplings can be placed in an oven-proof pan and baked in a hot oven, browning if desired. This makes a wonderful alternative.
