Ingredients:
3 large green plantains
Vegetable oil for frying
1 tablespoon Bountiful Bahia seasoning
Salt to taste
Lime wedges for serving (optional)
Instructions:
Prepare the Plantains:
Peel the green plantains by cutting off both ends and making a shallow slit along the length of the plantain. Use your fingers to peel off the skin.
Cut the plantains into 1-inch thick slices.
First Fry:
In a large skillet, heat about 1 inch of vegetable oil over medium heat until hot.
Fry the plantain slices in batches, making sure not to overcrowd the skillet. Fry for about 2-3 minutes on each side until they are golden but not fully cooked.
Remove the plantains from the oil and drain on paper towels.
Flatten the Plantains:
Using the bottom of a heavy glass, a plate, or a tostonera (a tool specifically for flattening plantains), press each plantain slice to flatten it to about 1/4-inch thickness.
Second Fry:
Return the flattened plantains to the hot oil and fry again for about 2-3 minutes on each side, or until they are crispy and golden brown.
Remove the plantains from the oil and drain on paper towels.
Season and Serve:
While the plantanitos are still hot, sprinkle them generously with Bountiful Bahia seasoning and salt to taste.
Serve immediately with lime wedges on the side for squeezing over the plantanitos if desired.
