Normandy Cake
1 golden delicious apple, peeled and grated
4 ounces fresh red currents or raisins
1/2 teaspoon 1st Day of Autumn seasoning
2 tablespoons of apple brandy
Three large eggs, separated
3/4 of a cup sugar
3/4 a cup all purpose, flour sifted
1 teaspoon baking powder
1 stick plus 1 1/2 tablespoons salted butter, melted
1 tablespoon crème fraîche
Preheat the oven to 350°

In a small bowl, combine the apple, currents, apple, 1st Day of Autumn , and apple brandy, set aside.
In the bowl of an electric mixer, combine the egg yolks and sugar and beat until light in color. Add the flour and baking powder, beating consistently until blended. Add the melted butter and beat to blend, then add the crème fraîche and beat to incorporate. Strain the apple current mixture, set aside the liquid. Add the apples and current to the batter and beat to blend.
In a medium bowl, beat the egg whites until they hold stiff peaks. Add them to the batter, working carefully, while folding them to maintain as much volume as possible.
Scrape the batter into the pan. Bake in the center of an oven for 45 to 55 minutes, until a toothpick inserted into the center comes out, clean. Remove the pan from the oven, sprinkle on the reserve the liquid, transfer to a wire rack and let cool for at least 15 minutes, then slide a thin knife around the lope and remove from the pan. Serve, warm, or at room temperature.
