Michel's Hot Puff - Firecracker & Wilde Garlek
Dough
2 ounces of butter
2/3 a cup of water
Half a teaspoon of salt
1 teaspoon Firecracker seasoning
One cup all purpose, flour
Four large eggs
Wilde Garlek Cheese Spread
4 ounces of cream cheese at room temperature
1 teaspoon of wild garlic seasoning
Make the dough
Place butter, water, firecracker seasoning, and salt in a saucepan. Bring to a boil, then reduce heat. As soon as the butter has melted, add flour all at once and stir vigorously with the wooden spoon until the dough forms and starts to come away from the sides of the pan. Beat the dough for one to two minutes and remove from heat. Cool.
Add one egg at a time to the dough and mix well until the mixture is very thick, smooth and shiny. This last part can be done in the bowl of a food processor.
Chill in the refrigerator for 20 to 30 minutes
Preheat oven to 425°.
Make the Wilde Garlek Cheese Spread
In a small bowl, cream, the cheese and the Wilde Garlek seasoning mix well.
Refrigerate until needed.
Cook the Puff
Pour the dough into a tart pan. Bake for 20 to 25 minutes or until golden Brown.
Remove pan from oven and cool.
Once the puff has cooled, you can move it to a plate.
Serve with a dollop of the Wilde Garlek Cheese Spread. Enjoy
