Spicy Tomato Salad
4 large tomatoes, sliced
1/4 cup chopped parsley
1/4 cup chopped basil
1/4 cup diced red onion
2 tbsp olive oil
1 tbsp red wine vinegar
Olives and Cucumbers are optional
Salt and pepper to taste
Arrange tomato slices on a large platter.
In a small bowl, whisk together olive oil, red wine vinegar, Eastern Mediterranean spice blend, salt, and pepper.
Drizzle the dressing over the tomatoes.
Sprinkle chopped parsley, basil, and red onion over the top.
Add in Optional items
Serve chilled.
