Lemon and Almond Tart

Ingredients:

For the crust:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup almond flour

  • 1/4 cup granulated sugar

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, cold and cubed

  • 1 large egg yolk

  • 2-3 tablespoons ice water

For the filling:

  • 3/4 cup almond meal

  • 1/2 cup granulated sugar

  • Zest of 2 lemons

  • 1/2 cup fresh lemon juice

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon Chai Pie Wallah seasoning

  • 1/4 cup melted butter

For garnish:

  • Sliced almonds

  • Powdered sugar

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with removable bottom.

  2. In a food processor, combine the all-purpose flour, almond flour, sugar, and salt. Add the cubed butter and pulse until the mixture resembles coarse crumbs.

  3. Add the egg yolk and pulse until the dough starts to come together. Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough forms into a ball.

  4. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom of the crust with a fork and chill in the refrigerator for 30 minutes.

  5. Once chilled, bake the crust in the preheated oven for 15-20 minutes, or until lightly golden brown. Remove from the oven and set aside to cool slightly.

  6. Meanwhile, prepare the filling. In a mixing bowl, whisk together the almond meal, sugar, lemon zest, lemon juice, eggs, vanilla extract, Chai Pie Wallah seasoning, and melted butter until smooth and well combined.

  7. Pour the filling into the pre-baked tart crust and spread it out evenly. Sprinkle sliced almonds on top for added texture and visual appeal.

  8. Return the tart to the oven and bake for an additional 20-25 minutes, or until the filling is set and golden brown on top.

  9. Once baked, remove the tart from the oven and allow it to cool completely in the tart pan on a wire rack.

  10. Once cooled, remove the tart from the pan and transfer it to a serving platter. Dust with powdered sugar before serving.
