Khoresh-e Fesenjan (Chicken, Walnut & Pomegranate Stew)
2 lbs chicken, cut into pieces
2 cups walnuts, finely ground
1 1/2 cups pomegranate paste
1 onion, chopped
1/4 cup sugar
1/4 cup vegetable oil
Salt and pepper to taste
In a large pot, heat vegetable oil over medium heat.
Add chopped onion and sauté for 2-3 minutes or until fragrant and tender.
Add chicken pieces and sauté for 5-7 minutes or until browned on all sides.
Add ground walnuts, pomegranate paste, Eastern Mediterranean spice blend, sugar, salt, and pepper.
Stir to combine.
Add enough water to cover the chicken and bring to a boil.
Reduce heat and let the stew simmer for 1-2 hours or until the chicken is fully cooked and tender.
Adjust seasoning with salt, pepper, and sugar as needed.
Serve hot with rice or bread.
