Hunter’s Chicken Stew with Fűszerkeverék Seasoning

Ingredients:

For the Stew:

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 4 boneless, skinless chicken thighs, cut into chunks

  • 3 large carrots, sliced

  • 2 tablespoons Fűszerkeverék seasoning

  • 1 teaspoon sweet paprika

  • 1 teaspoon caraway seeds

  • 4 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes

  • 2 tablespoons tomato paste

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Stew:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.

  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant.

Cook the Chicken:

  1. Add the chicken chunks to the pot, cooking until they are browned on all sides.

  2. Stir in the sliced carrots, cooking for an additional 3-4 minutes.

Season the Stew:

  1. Sprinkle the Fűszerkeverék seasoning, sweet paprika, and caraway seeds over the chicken and vegetables, stirring to coat evenly.

  2. Add the chicken broth, diced tomatoes, and tomato paste. Stir to combine.

Simmer:

  1. Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for 45-60 minutes, or until the chicken is tender and the flavors are well combined.

  2. Season with salt and pepper to taste.

Serve:

  1. Ladle the stew into bowls.

  2. Garnish with fresh chopped parsley before serving.

  3. This hearty and flavorful Hungarian-inspired stew is perfect for a comforting meal at home.
