Gruyère and Spinach Soufflé
3 cups fresh spinach, chopped
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1 1/4 cups whole milk
1/2 teaspoon sea salt
1/4 teaspoon ground nutmeg
4 large eggs, separated
1 cup Gruyère cheese, grated
1 teaspoon Garden Delight Spice Blend
Preheat oven to 375°F (190°C). Grease a 6-cup soufflé dish.
In a large saucepan, melt the butter over medium heat. Add the spinach and cook for 2-3 minutes until wilted. Stir in the flour and cook for 1-2 minutes, stirring constantly.
Gradually whisk in the milk, salt, nutmeg, and Garden Delight spice blend. Cook, stirring constantly, until the mixture thickens, about 5 minutes.
Remove from heat and stir in the egg yolks, one at a time. Add the grated Gruyère cheese and mix well.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the spinach mixture.
Pour the mixture into the prepared soufflé dish and bake for 30-35 minutes or until puffed and golden brown. Serve immediately.
