Ingredients:
For the Fish:
4 white fish fillets (like cod, haddock, or pollock)
1 cup all-purpose flour
2 tsp Fluffy Za'atar spice blend
1 tsp baking powder
1 cup cold sparkling water (or beer for a traditional batter)
Salt to taste
Vegetable oil for frying
For the Chips:
4 large potatoes, peeled and cut into thick strips
Salt to taste
1 tsp Fluffy Za'atar spice blend (for seasoning after frying)
Instructions:
Prep the Chips: a. Soak the potato strips in cold water for 30 minutes. This removes excess starch and helps in crisping them up. b. Drain and pat dry with a kitchen towel.
Fish Batter: a. In a mixing bowl, combine flour, 2 tsp of Fluffy Za'atar, baking powder, and salt. b. Slowly whisk in the cold sparkling water (or beer) until the batter is smooth and lump-free.
Frying: a. In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). b. While the oil is heating, dip each fish fillet into the batter, ensuring it's fully coated. c. Fry the fish in batches, turning occasionally, until golden brown and crispy (around 5-7 minutes). Remove and drain on paper towels. d. In the same oil, fry the potato strips until golden and crispy. Once done, remove and drain on paper towels.
Seasoning: a. While still hot, season the chips with salt and sprinkle with the Fluffy Za'atar spice blend for an added kick.
