Fire Island Luau Pork Sliders

  • For the Pork:

  • 2 lbs pork shoulder

  • 2 Tablespoons Fire Island seasoning

  • 2 cloves garlic, minced

  • 1 cup pineapple juice

  • 1/4 cup soy sauce

  • 1 tablespoon honey

  • For the Hawaiian Slaw:

  • 2 cups mixed cabbage, shredded (green and purple)

  • 1 carrot, shredded

  • 1/2 cup pineapple, finely diced

  • 1/4 cup green onions, chopped

  • 2 tablespoons cilantro, chopped

  • 2 tablespoons rice vinegar

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • For Assembly:

  • 12 Hawaiian sweet rolls, split and toasted

  • Extra pineapple slices, grilled (optional)

Directions:

  1. Prepare the Pork:

  • Rub the pork shoulder all over with Fire Island seasoning and minced garlic. Place it in a slow cooker.

  • In a bowl, whisk together pineapple juice, soy sauce, and honey. Pour the mixture over the pork.

  • Cook on low for 8 hours or on high for 4 hours, until the pork is very tender.

  1. Shred the Pork:

  • Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the cooking juices. Keep warm.

  1. Make the Hawaiian Slaw:

  • In a large bowl, combine shredded cabbage, carrot, pineapple, green onions, and cilantro.

  • In a small bowl, whisk together rice vinegar, olive oil, salt, and pepper. Pour the dressing over the slaw and toss to combine. Set aside to marinate for at least 10 minutes.

  1. Grill the Pineapple (Optional):

  • If using grilled pineapple slices, grill them on a hot grill or grill pan for 2-3 minutes per side, until charred and warmed through.

  1. Assemble the Sliders:

  • Place a generous amount of shredded luau pork on the bottom half of each toasted Hawaiian roll.

  • Top with a spoonful of Hawaiian slaw and a grilled pineapple slice (if using).

  • Cover with the top half of the roll.
