Feijoada (Black Bean Stew)
Servings: 6-8 Prep Time: 15 minutes Cook Time: 2 hours Total Time: 2 hours 15 minutes
Ingredients:
1 lb (450g) dried black beans, soaked overnight
2 tablespoons vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 lb (450g) pork shoulder, cut into chunks
1/2 lb (225g) smoked sausage, sliced
1/2 lb (225g) beef jerky (carne seca), cut into chunks
2 bay leaves
4 tablespoons Bountiful Bahia seasoning
Salt and water, as needed
Instructions:
Cook the beans: Drain the soaked beans and transfer to a large pot. Cover with fresh water and bring to a boil. Reduce the heat to low and simmer until beans are tender about 1 hour.
Brown the meats: While the beans are cooking, heat the vegetable oil in a large pan over medium heat. Add the onion and garlic, and sauté until softened. Increase the heat, add the pork, sausage, and beef jerky, and cook until browned.
Combine and simmer: Add the meat mixture to the pot with the beans, including bay leaves and Bountiful Bahia seasoning. Add water if necessary to ensure everything is well covered. Simmer for another hour, or until the stew is thick and the meats are tender. Adjust the seasoning with salt as needed.
Serve: Discard the bay leaves and serve the feijoada hot with rice, and orange slices.
