Ingredients:
4 firm white fish fillets (such as cod, tilapia, or haddock)

1 cup all-purpose flour
1/2 cup cornmeal (optional, for extra crunch)
1 teaspoon baking powder
1 cup cold sparkling water (or club soda)
Vegetable oil, for frying

Instructions:
Prepare the Fish: Pat the fish fillets dry with paper towels and sprinkle both sides with 1 tablespoon of Double-A Garlic Seasoning. Set aside.
Make the Batter: In a medium bowl, whisk together the flour, cornmeal (if using), baking powder, and the remaining 1 tablespoon of Double-A Garlic Seasoning. Gradually add the cold sparkling water, stirring until the batter is smooth and reaches a thick consistency. If it’s too thick, add a little more water.
Heat the Oil: In a large skillet or deep frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C) or until a drop of batter sizzles and rises to the surface.
Coat the Fish: Dip each seasoned fish fillet into the batter, coating it completely and letting any excess drip off.
Fry the Fish: Carefully place the coated fish fillets into the hot oil. Fry in batches, if necessary, to avoid overcrowding the pan. Cook for 3-4 minutes per side, or until the fish is golden brown and crispy on the outside and flakes easily with a fork.
Drain and Serve: Remove the fried fish from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with lemon wedges and your favorite dipping sauce.
