Ingredients:

  • 2 slices thick-cut bacon, chopped

  • 1 cup chopped onion

  • 1 pound ground sirloin

  • 8 ounces pork country sausage

  • 1 (10.75 ounce) can of condensed cream of mushroom soup

  • ½ cup milk

  • ¼ cup sour cream

  • 1 to 2 tablespoons Cowboy Crunch seasoning

  • 1 cup frozen corn kernels

  • 1 ½ cups shredded extra-sharp Cheddar cheese, divided

  • 1 (32 ounce) package of frozen tater tots

Directions:

  1. Preheat the oven to 375 degrees F (190 degrees C), positioning a rack in the center.

  2. In a large cast-iron skillet over medium heat, cook the bacon until browned and crisp, about 7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, saving 2 tablespoons of drippings in the skillet.

  3. Sauté the onion in the reserved drippings until softened, approximately 4 minutes. Ramp up the heat to medium-high, then add the ground sirloin and sausage. Stirring frequently, cook until the beef is thoroughly browned and crumbly, about 6 to 8 minutes.

  4. Off the heat, drain any excess fat if desired. Blend in the cream of mushroom soup, milk, sour cream, and Cowboy Crunch seasoning to your liking. Mix in the corn, cooked bacon, and 1/2 cup of the cheese.

  5. Evenly top with the remaining cheese and neatly arrange the tater tots in concentric circles over the cheese. You might have about 1 1/2 cups of tots left; keep these for another time.

  6. Bake until the casserole’s surface turns golden brown and the mixture bubbles beneath, roughly 35 minutes. Allow to rest for 5 minutes after baking. Serve this hot, savory dish and enjoy the rich, comforting flavors enhanced by your special Cowboy Crunch seasoning.
