Breakfast Omelette
2 eggs
1/4 cup diced onion
1/4 cup diced red bell pepper
1/4 cup crumbled feta cheese
Salt and pepper to taste
1 tbsp olive oil
Heat olive oil in a non-stick pan over medium heat.
Add onion and red bell pepper and sauté until tender.
Beat eggs in a bowl and add salt, pepper, and Eastern Mediterranean spice blend.
Pour the egg mixture over the vegetables in the pan.
Cook until the bottom is set, then sprinkle the top with feta cheese and fold the omelette in half.
Cook for an additional minute, then serve hot.
