Brazilian Cheese Bread (Pão de Queijo)

Ingredients:
1 cup of whole milk
1/2 cup of vegetable oil
1 teaspoon of salt
2 cups of tapioca flour (also known as tapioca starch)
2 large eggs
1 1/2 cups of grated Parmesan cheese
1 cup of shredded mozzarella cheese
1 tablespoon Bountiful Bahia seasoning
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Heat the milk mixture: In a medium saucepan, combine the milk, vegetable oil, and salt. Bring to a gentle boil over medium heat, stirring occasionally. Remove from heat as soon as it starts to bubble.
Add tapioca flour: Add the tapioca flour to the saucepan and stir with a wooden spoon until well combined. The mixture will be grainy and gelatinous.
Cool the mixture: Allow the mixture to rest for a few minutes to cool slightly. This is important to ensure the eggs do not cook when added.
Mix in eggs: Add the eggs one at a time, mixing well after each addition until the dough is smooth and homogeneous.
Add the cheese and seasoning: Incorporate the grated Parmesan, shredded mozzarella, and Bountiful Bahia seasoning into the dough, mixing until evenly distributed.
Shape the dough: Using an ice cream scoop or two spoons, scoop the dough and form small balls (about 1.5 inches in diameter). Place them on the prepared baking sheet, leaving space between each ball.
Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cheese breads are puffed up and lightly golden.
Serve warm: Let them cool for a few minutes on the baking sheet, then transfer to a serving plate. Pão de Queijo is best enjoyed warm.
Tips:
You can adjust the amount of Bountiful Bahia seasoning to taste. Start with 1 tablespoon and add more if you prefer a stronger flavor.
These cheese breads are best enjoyed fresh, but they can be reheated in a warm oven if necessary.
