Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon Pumpkin Love seasoning
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2-3 bananas)
1/2 cup sour cream or plain Greek yogurt
1/2 cup chopped nuts (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, salt, and Pumpkin Love seasoning. Set aside.
Cream the Butter and Sugar:
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
Add the Wet Ingredients:
Beat in the eggs one at a time, then stir in the vanilla extract.
Add the mashed bananas and sour cream (or Greek yogurt) to the mixture and blend until well combined.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chopped nuts if using.
Bake the Bread:
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Slice and serve warm or at room temperature.
