Option 1: Pumpkin Love Banana Bread
Ingredients:
1 2/3 cups all-purpose flour
1 tsp baking soda
1 tsp Pumpkin Love Seasoning
1/2 tsp kosher salt
1/2 cup white sugar
1/2 cup plus 2 tbsp brown sugar
2 eggs
1/2 cup olive oil
3 1/2 very ripe bananas, peeled and mashed (about 1 1/2 cups)
2 tbsp sour cream
1 tsp vanilla extract
Optional: 1 cup chopped walnuts, split (3/4 cup is mixed in batter, 1/4 cup is sprinkled on top before baking)
Option 2: Epice Pour Pommes Banana Bread
Ingredients:
1 2/3 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1/2 cup white sugar
1/2 cup plus 2 tbsp brown sugar
2 eggs
1/2 cup olive oil
3 1/2 very ripe bananas, peeled and mashed (about 1 1/2 cups)
2 tbsp sour cream
1 tsp vanilla extract

Option 3: Chai Pie Wallah Banana Bread
Ingredients:
1 2/3 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1/2 cup white sugar
1/2 cup plus 2 tbsp brown sugar
2 eggs
1/2 cup olive oil
3 1/2 very ripe bananas, peeled and mashed (about 1 1/2 cups)
2 tbsp sour cream
1 tsp vanilla extract
Optional: 1 cup chopped walnuts, split (3/4 cup is mixed in batter, 1/4 cup is sprinkled on top before baking)
Directions (same for all options):
Preheat the oven to 325°F (163°C) with the rack in the center.
Lightly butter and flour your pan(s) of choice.
Sift together the flour, baking soda, chosen seasoning blend (Pumpkin Love, Epice Pour Pommes, or Chai Pie Wallah), and kosher salt in a bowl and set aside.
With a stand mixer fitted with the whip attachment, beat together the sugar and eggs on medium speed until light and fluffy, about 5 minutes.
Switch to low speed and slowly drizzle in the olive oil, taking your time to keep all the air you just beat into the mixture.
Add the mashed bananas, sour cream, and vanilla extract, and continue to mix on low speed just until combined.
Use a rubber spatula to fold in the flour mixture until thoroughly combined. No flour streaks should be visible.
Mix in 3/4 cup of chopped walnuts if using.
Pour the batter into the prepared loaf pan(s) and bake for 1 to 1 1/4 hours for a 9×5-inch loaf, and about 50 minutes for three 6×3-inch loaves. The loaves should be golden brown on top and spring back when pressed.
Let the loaves cool in the pan on a wire rack for 30 minutes, then remove from the pan and let cool completely on the wire rack.
